Chef Paul McCabe has made his mark on the San Diego culinary scene. Currently serving as Executive Chef of L'Auberge Del Mar and their signature restaurant, Chef McCabe has also held Executive Chef positions at San Diego's Top of the Cove and Star of the Sea.
Heralded as a "rising star of American Cuisine" by the James Beard Foundation, Chef McCabe has cooked for some of Hollywood's hottest stars and epicureans from across the globe. McCabe and his culinary team have consistently won awards, recently winning Golden Sceptre and Golden Baccus awards from the Southern California Restaurant Writers, the Wine Spectator Magazine Award of Excellence, and Best Hotel Dining by San Diego City Search. To complement his array of culinary awards, Paul McCabe is recognized as a Chef de Rotisseur, currently serving as an officer of their San Diego Chapter and he has been invited on many occasions to cook at the James Beard House in New York.
Chef McCabe's background includes extensive training in French, Mediterranean, Southwestern, Pacific Rim and spa cuisine. A native of Sedona, Arizona, McCabe began his career as an apprentice for Chef Michel Blanchet of L'Ermitage restaurant in Los Angeles. This classical training prepared him for a position at L'Auberge de Sedona and the Sibu Café in Kona, Hawaii, where he added Asian techniques to his classic styles. After making stops in both Los Angeles at the five-star L'Ermitage Hotel and Arizona as Executive Chef at Enchantment Resort, Chef McCabe finally settled in San Diego in 2001 and has been with L'Auberge Del Mar since fall of 2004.
A true culinary artist, Chef McCabe's menus reflect his vitality and showcase the best of each season. His outgoing personality and passion for food is a perfect match for the new restaurant's social theme. Although his cooking style is imaginative, McCabe is still a traditionalist at heart, utilizing only the finest local produce and creating dinner menus centered on organic ingredients. As he updates his menu on a regular basis, guests know that they will always be enjoying the freshest ingredients when ordering one of Chef McCabe's creations.
